My friend Connie & I went to Weston Gardens in Ft Worth to see Bryan Slaven talk & demonstrate his products in April. I was really impressed with the no preservites & low sugar content. We have been eating healthy for sometime now & every recipe I usually find has too many carbs, fat or salt. I could use all his recipes & have used several thus far & have enjoyed everyone of them. Went home & tried the 1st recipe on friends from Canada. Want to buy some more products next time I go to Westons.

Thank-you for all your help with this order. My husband wants to razel - dazel his cooking buddies in Springfield, Missouri with your sweet chipotie season and the marmalade jelly. He usually pulls his large smoker (Hell'sCrematorium) and they furnish all the meat, room and board , etc. He wanted to contribute something different this year, so your products are it!

Dear Bryan,

One word brother... ADDICTING!  Man I tell you what, that pineapple & mango pico was awesome!  I've been getting TF&G mag for about 3 years now and this was the first time I actually decided to try one of the recipes in your column.  Now I'm kicking myself in the rear end for not doing it sooner!  I can only imagine what I've been missing.  If you recall I was the guy who called you from San Antonio while at HEB looking for a substitute for the Tx Gourmet Mandarin Orange Serrano jelly.  Your suggestion as a substitute was terrific and the only thing I did differently was add an orange bell pepper.  HEB didn't sell red and yellow ones separately, but rather in a package of 3 (red,orange,yellow)  so I just threw in the orange one.  I got to tell you though, that my left hand was on fire after doing all that slicing and dicing.  Luckily I had a chopper to help speed the process, but it still took me awhile to prepare considering it was my first attempt at making something like this and for me it was a bit involved, but nevertheless I enjoyed doing it and would do it again and again!  My wife enjoyed it the same if not more and I took it to our bible study a couple of days later and it was a hit! 

Well thanks for the recipes and I will always remember to stop and read your column from now on.

Truly Enlightening

We extended Brian an invitation to the Diamond "A" ranch in Seguin TX. We had heard about all the great things he could do with wild game. We had also enjoyed his jalapeno Kiwi jelly and a few of his sauces. What we really wanted was to see firsthand if the walk could back up the talk. Brian was amazing. As a novice cook myself I could tell right away that he LOVED cooking. His eyes would light up every time he started to discuss cooking. He is not only a great cook but also a great teacher, very patient and explained everything including the "why's" and he has a wonderful ability to get everyone involved. We did several dishes for the weekend and everyone enjoyed the food including other guest, owners, and ranch guides. Everyone who tasted a dish would come to me and make sure that I was taking notes so that it could be somewhat duplicated in the future. I personally enjoyed the new and easy techniques of flavoring and cooking. This experience has broadened my menu many fold, just the ability to add a sauce or a simple reduction to make a totally different meal with the same basics that you normally use plus being able to cook wild game that would make it in any 5 star restaurant . I since have purchased most of Bryan’s sauces and spices and now I look forward to cooking so that I can see how it all turns out. My mouth waters at the thought of the next time I get to cook venison wraparounds or the Hunter’s quick dirty rice. Bryan is a person that you really need to be around. I know that any event I have in the future will include him if he is available. Where were you when I got married?? I had to settle on mexican food catering....lol.

On October 25, 2008, Bryan Slaven, the Texas Gourmet, came to our Dilley Ranch and fixed a delicious gourmet wildgame dinner for 20 people! When he arrived on Friday evening, he immediately began marinating the Feral Hog Ham in a Sugar Cure for 16 hours. The next morning he began marinating the Cabrito. He  cooked all day using many of his rubs, spices, jellies and all fresh vegetables. He actually conducted a cooking class during the day, as he taught us how to use his many great products to mask any gaminess of the meats and enhance the flavors of each dish. He brought copies of his recipes for each of us. We were all amazed at how the jellies were used to make fabulous glazes! You would have never known that this was wildgame!

We started with Habanero Glazed Quail---an "out of sight" appetizer! Then came a Grilled Poblano Soup---probably the best soup we have ever had! Then came the main course of the Feral Hog, Cabrito, fresh green beans, and tiny new potatoes served with a nice glass of Cabernet. To top all of this---he fixed Bananas Foster over Vanilla Ice Cream for us! All I can say is---what a treat!

I have been using the Texas Gourmet products for several years and have not been disappointed. I have my favorites (Japaleno-Kiwi Jelly, Lemon Rosemary Habanero Grilling Sauce, Sidewinder Searing Spice and Sweet Chipolte Season All) but all the products are well thought out and of excellent quality. I have a passion for for food and have even been so fortunate to win a few awards. I have used these products in my cooking and have been developing a few new tastes along the way. The folks at the office always love Christmas as they know a TG gift basket is coming their way.

The Texas Gourmet takes your taste buds where they've never been before. None of the products bore or overwhelm with heat. I have used all of his recipes from Bacon Wrapped Shrimp to Venison Chili, and none have failed to deliver. Undoubtedly my dinner guests and hunting and fishing buddies ask for his website after they've tasted what the Texas Gourmet's products can do. As an outdoorsman, I appreciate the Texas Gourmet's attention to detail on his website which incorporates the proper handling of game, and how to prepare your favorite harvest from the field including fish, quail, venison, dove and duck. Also, send him an email or give him a ring, as he is quick to respond to your questions, and offer advice on flattering side dishes and delicious wine pairings. His passion is evident and proves true in his products. His rubs and spices bring your basic meats and veggies to life and his spicy jellies take it up another notch. I'm telling ya, I can eat this stuff on a cracker!! Especially the new pepper sauce....mix that with your oysters and beer!!!!

Just absolute fantastic. Out of this world. Nothing I have tried before has even come close. Try it ,buy it and you will be cooking with the spice of life. It is actually addicting.

You have got to try the Jalapeno Kiwi, its the best! We will be ordering the gift sets for the holidays.

This has to be the best jelly I have tasted in years!...The Jalapeno Kiwi jelly is so delightful. The Pineapple Chipolte grilling sauce is wonderful for grilling or even as a dipping sauce.
