Yellow Squash Casserole

 

 
                          Yellow SquashCasserole
                                                                                        Serves 4 to 6
Ingredients:
5 to 6 yellow squash- (or combination of yellow and zucchini squash) - sliced into ¼” round slices
1-      White or yellow sweet onion- chopped
2-      ¾ stick of unsalted butter-  ( or 6 T. Margarine)
3-      t. Olive oil
1 – sleeve- Ritz crackers- crushed fine
2 eggs – beaten
½ t Beau Monde (spice found in the spice section of your favorite grocery store)
¾ cup – milk
1 cup- mozzarella- grated
½ t. black pepper
1-      9 x 9 Pyrex baking dish
Preparation-
Sauté onion in butter until clear
Add squash, season with Beau Monde Seasoning and blk. Pepper
Sauté until softened, remove from heat, transfer to a large bowl, add Ritz cracker crumbs, eggs, milk, olive oil, mozzarella cheese, stir well to combine
Place in a greased 9 x 9 baking dish, and bake in a preheated oven @ 325 degrees uncovered for 40 minutes or until golden brown
Serve hot! It’s real good!
